This diabetic friendly cauliflower rice is delicious and simple to make. Goes well with your favorite protein or a side salad. The first time I cooked this dish I served it with shrimp and a side salad. My dad who is not the one to branch too far outside of his typical southern diet loved it. He said “I think I’m starting to like cauliflower rice.” I am going to win this ‘ol southern boy over yet.
Kale, Spinach & Mushroom Cauliflower Rice

INGREDIENTS
2 10 oz bags of frozen riced cauliflower
4 tbsp low sodium soy sauce
2 tbsp olive oil
1 cup chopped onion
4 cloves minced garlic
2 tbsp grated fresh ginger
2 cups baby spinach
1 cup chopped kale
DIRECTIONS
- Cook cauliflower rice according to package instructions
- Cook kale and onions till soft in olive oil heated skillet
- Add mushrooms to kale and onions
- Add in ginger and garlic, stir
- Add cauliflower rice and soy sauce
- Finally add in spinach and cook until wilted
